A Modern Rose: Fattoush

This weeks recipe is a light and healthy salad!

It is no secret that I am a frequent visitor at Babel on Kastianienallee as the name frequently pops up in my blogs. This is not just because it happens to be very local but also because the food is tasty and fresh. While the falafel teller may be my regular choice I am also a big fan of the fattoush – a salad of mixed herbs and packed with grilled pitta bread.

I often make this recipe in the spring/ summer months as it is light and quick to make. I griddle the pitta bread to give it a real charred taste. The sumac and lemon dressing is where the flavour is really at! You can buy sumac at most local Asian stores. 


Ingredients:

2 romaine lettuce (chopped)

Handful of radishes (sliced)

1 red onion (peeled and sliced)

Handful of cherry tomatoes (cut in half)

2 tomatoes (roughly chopped)

Handful of fresh parsley leaves

Half a cucumber (seeds removed and roughly chopped)

3 pitta breads

For the dressing:

4 tbpsn olive oil

2 tbspn sumac

Juice of half a lemon

2 cloves garlic (crushed)

Ground black pepper

Griddle the pitta breads on each side for a couple of minutes.

Add the salad ingredients to a large mixing bowl.

For the dressing: mix everything together in a small bowl.

Thinly slice the pittas and add to the mixing bowl with the salad.

Pour in the dressing and mix everything together. Then serve!
