A Modern Rose: Nasi Goreng

Rose makes a tasty Indonesian fried rice dish that is quick and easy to make.

Nasi Goreng is one of my favourite meals to make after a busy day. A delicious bowl of fried rice with chicken and prawns, topped with shredded egg and a chilli sauce – this is a perfect comfort food to munch on in front of the TV. You can leave out the meat and/ or prawns and replace with some extra green beans. Everyone has their own way to cook this dish.

I find good Indonesian food hard to come by in Berlin. Places such as Tuk Tuk serve up a pretty awesome Nasi Goreng but there is a lack of choice. Luckily, you can buy the ingredients for this dish at a supermarket and any local Asian store such as Asia Mekong


Ingredients:

For the fried rice:

2 chicken breasts (diced)

Large prawns (de-frosted if cooking from frozen)

225g plain basmati/ long grain rice (cooked and cooled)

Handful of fine green beans (trimmed and cut in half)

4 spring onions (finely chopped)

1 tspn ketjap manis (sweet soy sauce and can be found in most Asian stores)

1 tbspn light soy sauce

1 tbpsn vegetable oil

Juice of half a lemon

4 free range eggs

Fresh coriander

For the paste:

2 cloves garlic (peeled and crushed)

2 lemongrass stalks (outer layer removed and finely chopped)

1 tbpsn turmeric

1 tspn dried chilli flakes

2 shallots (peeled and diced)

Black pepper

2 tbpsn vegetable oil

For the garnish:

Half a cucumber (cut into matchsticks)

2 tbpsn peanuts

1 tspn caster sugar

1 tbspn oyster sauce

1 tspn light soy sauce

1 tspn dried chilli flakes

Heat the vegetable oil in a large frying pan. Add the chicken and cook for around 5 minutes. Then add the green beans and leave to gently cook for a further 3-5 minutes.

To make the paste: mix everything together in a blender. Add the paste to the pan with the prawns and mix well with the chicken and beans. Leave to cook for another 3-4 minutes.

In the meantime crack the eggs into a bowl and mix. Heat a small frying pan and then pour in the egg mixture. Cook for around 5 minutes until the eggs are cooked through.

Add the rice to the pan and mix well. Add the soy sauce, coriander and ketjap manis. Keep mixing the rice with all the ingredients so that everything is well combined.

Mix the sugar, oyster sauce, soy sauce and chill flakes in a small bowl and leave to one side.

Take the eggs off the heat and cut into thin shreds. Top the fried rice with the eggs, cucumber and peanuts and then drizzle the sauce on top.

Serve with some lime wedges.
