A Modern Rose: Apple Cake

Hello Autumn! Time to make use of all the apples around at the moment with this weeks recipe.

Autumn is in full swing! Not that I am pleased that summer is over but a small part of me is happy that the days are cooler, my flat is cosy and warm and the evenings are drawing in. It must then be apple season! They are everywhere at the moment and are falling out of their boxes at local farmers markets and in the supermarkets – and therefore ending up on my plate a bit too often!

This apple cake recipe is sweet and delicious. I love the smell of the apples cooking in the oven and once the cake is done then cutting a slice with a pot of tea to enjoy on a lazy Sunday afternoon. I find that apples work perfectly in cakes and this recipe is a favourite of mine. Perfect to make use of all them apples around at the moment!


Ingredients:

225g butter

4 apples (peel, core and cut into 1cm chunks)

200g caster sugar

2 tspn baking powder

225g flour

25g ground almonds

1 tspn almond essence

3 large free range eggs

small handful of flaked almonds

Pre-heat the oven to gas mark 4/ 180 degrees Celsius. Line a 23-24cm springform tin with baking paper.

Add the butter and sugar to a large mixing bowl and using an electric whisk mix until smooth. Add the eggs one by one and keep mixing. Stir in the almond essence.

Add the flour, ground almonds and baking powder to the mixing bowl. Mix with a wooden smooth until everything is well combined and forms a cake batter. Then add the apples and mix well.

Pour the mixture into the cake tin and top with some flaked almonds. Place in the oven for around 50 minutes or until golden brown and cooked through.

Leave to cook for 15 – 20 minutes to eat warm and slice up once cooked completely.
