A Modern Rose: Easter Weekend Brunch

Many of us are looking forward to spending Easter weekend with friends and family and are wondering how to spend the long weekend. I like to have a special brunch at Easter weekend, either on the Friday with a group of friends, Easter Sunday with family or the Monday to end a fun – and probably exhausting – weekend. Plus, we all know – Berlin does love to brunch!

Whether you are staying in Berlin or heading away for the weekend this brunch recipe is easy to make for a small group of friends or the family. Happy Easter!

Bacon, Avocado, Grilled Tomatoes and Scrambled Eggs on Grilled Bread

Fish Lovers: You can always swap the bacon for some smoked salmon.

Ingredients: serves 4

8 slices bacon

4 medium size tomatoes (cut into 12 slices)

8 free range eggs

4 tbpsn milk (semi skimmed or full fat)

10g butter

2 avocados (peeled, sliced and stone removed)

4 large thin slices of wholemeal bread

Ground black pepper

Heat the butter gently in a saucepan on a low heat. Also heat a large griddle pan or preheat the grill to a medium heat.

Crack the eggs into the pan and gently beat the eggs. Pour in the milk and turn up to a medium heat. Keep occasionally stirring the eggs so that they do not stick to the pan.

Place the bread, bacon and tomato slices under the grill OR onto a griddle pan. Turn them over after 3 minutes.

Check the eggs and keep stirring. By this point they will almost be done so make sure that they do not stick to the pan. Once they are light and fluffy take off the heat and place a lid onto the pan.

Lay out a slice of bread and 3 slices of tomatoes onto each plate. Spoon the scrambled eggs evenly, scatter the sliced avocados on top and they lay 2 slices of bacon on top for each dish.

Garnish with ground black pepper and enjoy with a cup of tea/ coffee.
